Ingredients

  • 1 ½ pounds skinless, boneless chicken breasts
  • 1 tbsp. corn starch
  • 1 egg white
  • 1tbsp. rice vinegar
  • 2 tbsp. coconut oil
  • 1-2 tbsp. red curry paste
  • 1 bunch of broccoli
  • 2/3 cup peanut butter
  • 1 medium red onion diced
  • 2 tbsp. brown sugar
  • 2 cloves garlic minced
  • 1 ½ tbsp. fresh ginger finely chopped
  • 1 ½ tsp. turmeric
  • ½ medium red onion
  • 2 cups chicken broth
  • 14 ounces of coconut milk
  • ¼ cup low-sodium soy sauce

  • Sesame seeds
  • Cilantro, Thai basil, or mint
